Wild Turkey, Apple and Gorgonzola Salad Recipe

You’ll need about two cups of shredded wild turkey meat to make this salad recipe for a family of four. It might take a couple of wild birds to get enough for a larger gathering.

Serves: 4
Prep time: 15 minutes
Total time: 25 minutes

Vinaigrette Ingredients:

  • 2 garlic cloves, minced
  • 3 tablespoons freshly squeezed lemon juice
  • ¼ cup rice vinegar
  • 1 ½ teaspoons sugar
  • ½ teaspoon Dijon mustard
  • ⅓ cup olive oil
  • Kosher salt and freshly ground pepper

Salad Ingredients:

  • 2 cups shredded wild turkey meat
  • 1 cup crumbled Gorgonzola cheese
  • 1 cup dried cranberries
  • 3 firm, crisp apples, cored and thinly sliced
  • 1 medium red onion, halved and thinly sliced
  • Romaine lettuce, roughly chopped

Directions:

1. In a bowl, whisk together vinaigrette ingredients. Stir until thoroughly combined.

2. Toss salad ingredients in a large bowl with vinaigrette and serve immediately
